The operation is led by Diana Brier, a certified cheese sensory evaluator -- which is like being a sommelier for cheese -- who is always ready to put together a good pairing. If you just want to pull a bottle off the shelf and enjoy a few sips, there's no corkage free. You can also access sips from a machine with a membership card.

The wine selection has regions like France, Italy and the western United States well represented, but digs deep for boutique options from countries like Portugal and Uruguay with special attention paid toward women-, LGBTQ- and Black-owned producers. Valley Cheese & Wine stresses education in a low-pressure atmosphere and holds regular classes on Thursday nights -- with tastings, of course. A happy hour runs from 2-6 p.m. Tuesdays through Fridays, with a bottle and cheeseboard for two for $40.
