Coyote’s is a true Henderson institution. In business since 1989, it’s become a landmark near the corner of Sunset Road and Green Valley Parkway.

The margaritas have the reputation as being the best in town, and it’s and no wonder. The Cadillac comes with a Grand Marnier float and a choice of seven tequilas, while the fruit varieties vary by the season.

As for the food, you’ll find all the familiar Mexican-American specialties: the nachos and tacos, enchiladas and burritos, as well as some creative choices (many with a New Mexico flavor). Among the signatures is the Sopapilla Relleno, which is shredded chicken or beef stuffed in a sopapilla and covered in green or red chile and melted cheese, and Zarapes, two large flour tortillas stuffed with marinated beef and pico de gallo and topped with red and green chile, sour cream, melted cheese and guacamole.

Stopping in for a business lunch with that one colleague with a true white-bread palate? Reassure him or her with choices such as the Hamburguesa Coyote (which is a third-pound burger), or a rack or half-rack of barbecued baby back ribs.
