Vegas Test Kitchen
$ $Located next to Fergusons Downtown, the city’s first test kitchen is sectioned into multiple vendor hubs. Each operates independently around a central dining room, offering rotating restaurant concepts, pop-ups and special events under one roof. There’s always something new, including special dinners and new weekly menus from longtime participants, such as This Mama’s House.
Others that have taken up longtime residency include Yukon Pizza specializing in sourdough crust made from a 120-year-old family heirloom starter that’s cooked in a wood-fired oven; Brown Bagger, a collaboration between Soulbelly chef Bruce Kalman and Vegas Test Kitchen founder Jolene Mannina offering East Coast deli sandwiches; and Poppnpies with sweet delights such as peanut butter and chocolate pie. But every concept here is, by design, temporary. Many have moved on to more permanent digs, and we can only hope others follow. The joy is in the discovery of something new.
